We were just one of the over 4 million residents affected in the September 8th Blackout of 2011 (areas from Southern California, Mexico and Orange County). We came through it unscathed, no worries…except one. I’m sure it’s pure coincidence – maybe? My oven is out. Was working on a batch of…well, something for an overdue TeenieCakes.com post when as my luck would have it that my oven croaked. First it wouldn’t get hot enough. My baked goods took twice as long as they should have – and that’s never good. And then, the oven wouldn’t turn off. Hmmm. Had to resort to flipping the breaker to shut it off. We’ll determine the prognosis this afternoon when the repair man assesses its fate.
Did you freeze some gorgeous summer berries for use when they’re out of season, hard to find or criminally expensive? I’m using some raspberries I froze a couple of weeks ago for this healthy yogurt smoothie. It’s gooood, it’s filling and it will take the place of whatever meal you’re closest to when you’re sucking it down with a straw.
This yogurt smoothie is quick to whip up. For smoothies, freeze bananas that are yellow, ripe and firm.
- Used 4 large ice cubes. The quantity is preference, but I like my smoothies cold.
- Do you use protein powder or the like? Add a spoonful to the smoothie.
- Don’t have frozen raspberries? Frozen blueberries or strawberries would work well too.
- For smoothies, freeze bananas that are still yellow and firm. Save the brown, mushy bananas for baked goods.
1 Serving
1 banana, frozen
5 raspberries, frozen
4-8 ice cubes (quantity is preference)
1 cup low-fat vanilla yogurt
2 teaspoons honey
1/2 teaspoon ground cinnamon
pinch of nutmeg
Blender
Straw
Cut the ends off of the frozen banana. Cut into three equal parts and remove peel. Place frozen banana, frozen raspberries and ice cubes in a blender.
Add the yogurt, honey, cinnamon and nutmeg. Blend until smooth, about 1 1/2 – 2 minutes.
Poor into a tall glass, push a straw in the yogurt smoothie and enjoy immediately.
