Aubergine – Baby Eggplant.
Also known as melongene, brinjal, and guinea squash. The fruit of a plant that is botanically classified as a berry but eaten as a vegetable. It is a close relative of tobacco.
The raw fruit can have a bitter taste, but it’s flavor and texture becomes tender and develops a rich, complex flavor when cooked. Popular in many cuisines from Japan to Spain. Eggplant is popular in the French ratatouille and the Italian parmigiana di melanzane.
