Banana Macarons with Coconut Cream
This month on MacTweets we are creating macarons inspired by a wild animal or “Taking A Walk On The Wild Side“. My macarons weren’t inspired by a wild animal, but instead by adventures to a jungle…a regular Indiana Jones wild adventure! Through the jungle we have to survive all the other wild animal inspired macarons. In our plight, we must regain our strength and take nourishment from jungle fare. What to eat in the jungle? Bananas and coconuts are plenty so we gather new energy sources from Banana Macarons with Coconut Cream!
I used a teaspoon of banana extract and 1/2 teaspoon of yellow food coloring paste (paste from Williams Sonoma). Still having some issues with their being too much moisture in the piped shells, so had some slightly over-spread pied. The filling is a lusciously sinful coconut cream that can be used in other cream filled desserts.
- For the macaron shells, see my post from October 2009 for Parisian Macarons.
- Used 1 teaspoon banana extract and 1/2 teaspoon yellow food coloring paste for the macaroon shells.
- I doubled the recipe for the coconut cream filling (listed below) and had plenty leftover. You can easily half the recipe.
- After filling the macarons and they are sandwiched together, I later rolled the sides in shredded coconut. It gave it a “cute” and different look with coconut flakes skirted out the sides.
- I had never used “cream of coconut” before and initially had a hard time finding it in stores. I tweeted about it and my problem solved through Twitter! Many thanks to Kate of Savour Fare for suggesting I look in the liquor aisles of my local markets as they are used in Pina Coladas. Bingo! That’s where I found it (Vons). =)
Will generously fill 2 dozen sandwiched macarons with extra to spare
4 tablespoons unsalted butter, room temperature
4 tablespoons cream of coconut
1/2 cup vegetable shortening
1 1/2 cups confectioner’s sugar
2 teaspoons coconut extract
Put butter, cream of coconut, and shortening in bowl of electric mixer with paddle attachment. Mix on medium speed until smooth. Add confectioner’s sugar and coconut extract; mix until pale and fluffy. Store extra in refrigerator.

I’m enjoying MacTweets, as it gets me working on my macarons. Still have issues with it, but that’s why there’s MacTweets! I have a couple of great flavor combinations on my mind and may just work on them before the next MacTweet challenge.

They look so adorable and I love the colour you obtained. You mentione the flatter shape – wondering if you aged the egg whites at all? That could explain the pretty frilly feet too. I think they look perfect as they are though, and the flavours sound delicious.
