Have 2 or 3 figs to spare before the summer is all over?
Here’s a quick & tasty appetizer (although I enjoyed it as a dinner) that’s sure to make a palate happy that enjoys these flavors. In fact, it is so quick and easy it really doesn’t even need a recipe!
The lazy days of summer are just about to gracefully transition to the Autumnal Equinox on Sunday, September 22nd (for the Northern Hemisphere). Although Southern California can still feel like summer days into late October, I’m all geared and mentally ready for the change and shorter days.
Although we don’t experience the spectacular change of color that other parts of our country enjoy, I still love the idea and romantic notion of all the color change in the landscapes. I tried planning our landscape around the brilliant colors that some trees can lend. Hopefully it will be a colorful one this year!
So how about this rustic and welcoming appetizer?
Layered with the tang of goat cheese, a quartered fresh fig, sprinkled with pistachios and drizzled with the sweetness of honey – it’s difficult to stop at just a couple of these crostinis.
Pair with a glass of Chianti, if dry red wine is your thing. A crisp Sauvignon Blanc would do well too.
I’ve used pistachios here because I wanted a salty element and the flavor it brings. If you have some pine nuts to spare it’s buttery flavors would be complimentary. For the goat cheese, it’s preference as to how much. I like a generous smather (it’s like the pairing of cream cheese on bagels…SPREAD IT ON!!). This isn’t really a recipe, but rather a guide or suggestion.

Oh my gosh I have been wanting figs for the longest! Week before last my favorite grocery store had them and now they are gone. Finding them around here is a huge challenge but after seeing these I am more determined than ever to find them. Love, love your pictures.
Cristina says
Thank you Sandra!! I can never find figs in our local markets. I’m sure they’re available at our weekend Farmer’s Markets, but I never have a chance to get there. I planted a couple of fig trees a couple of years ago and it’s been paying off! 🙂
