Why not serve something that’s both delicious and loaded with health benefits? Loaded sweet potatoes…high in fiber, high in antioxidants, low glycemic index and an excellent source of potassium.
Taking what could be an ordinary side and taking it up another level or two, I’ve baked (or microwaved) sweet potatoes and refilled it with a tasty combination of the sweet potato pulp, Hidden Valley Ranch® Dressing, and feta cheese. Garnish the top of this loaded baked sweet potato with some bacon, feta cheese and a toss of fresh green onions and you have not only a delicious side dish to serve, but a beautiful one as well!
Whip it up during the busy week, weekends and particularly appropriate for your holiday tables. As a complimentary and healthful side dish, serve it with a roasted chicken, turkey, pork or a good cut of beef.

Loaded sweet potatoes over russets any day. The sweetness is great, of course, but it gives you a more interesting layering of flavors when you play around with salty, savory, spicy or sweet toppings.

LOL! Thank you Crystal. It was fun playing with the flavors on this one because sweet potatoes have such a sweet/savory element and adding the tang with the salty just made it even more interesting and complex. 😉

These are perfect in everyday. I love everything about them. If the 5 littles ones (to two adults) at my Thanksgiving table would eat them this way vs candied, I would be making them this way for turkey day…guess I will just make them for dinner for just me!!!
