Blueberry, Banana-Walnut Crumb Muffins
I made a couple of changes to the Banana Crumb Muffins I wrote about a couple of months ago. As mentioned in the earlier post, the recipe is adapted from allrecipes.com and has become one of my very favorite recipes for banana muffins. The recipe may require some planning in having very ripe bananas on-hand. I’m always happy to “promote” bananas to the special rectangular bin I have in my refrigerator where bananas that are destined to be used in bread or muffins await their final destiny. The batter requires three ripe bananas.
These muffins are moist and banana-flavorful. I hope you’ll give them a try and enjoy them too! My teenie twists on these Blueberry, Banana-Walnut Crumb muffins:
- Added 1 teaspoon ground cinnamon to the batter.
- Added 1/4 cup chopped walnuts in the crumb topping and 1/4 – 1/2 cup chopped walnuts to the muffin batter.
- Placed 3-4 large blueberries on of each muffin before covering with the crumb topping.
- Make sure those bananas are “ripe”. I mean, the peel is evenly dark and it looks inedible!
Makes 10 Regular-Sized Muffins
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 “very ripe” bananas, mashed
3/4 cup granulated sugar
1 egg
1/3 cup unsalted butter, melted
1/4 to 1/2 cup walnuts, chopped
1/2 cup frozen blueberries or 40 frozen blueberries (4 berries for each muffin)
Crumb Topping
1/3 cup brown sugar, packed
2 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
1 tablespoon butter
1/4 cup walnuts, chopped
Preheat oven to 375 degrees F. Spray muffin cups with non-stick spray.
In a large bowl, mix together flour, baking soda, baking powder, salt and cinnamon. In another bowl, beat together the bananas, sugar, egg and melted butter. Stir the banana mixture and walnuts into the flour mixture until incorporated. Spoon batter into prepared muffin cups. Slightly push 3-4 blueberries into the muffin batter.
In a small bowl, mix together brown sugar, flour, cinnamon and walnuts. Cut in the butter until mixture is coarse like cornmeal. Sprinkle the crumb mixture over the muffins.
Bake in preheated oven for 18-20 minutes. Test for doneness by inserting a butter knife or wooden toothpick into the middle of one of the muffins.

Oh! I’m kicking myself in the butt for not heading here earlier. I made banana chocolate chunk muffins tonight, but was contemplating doing some sort of crumb topping and got lazy. Had I visited your blog I would have been influenced! It looks beautiful 🙂

I remember those muffins but these are even better with the blueberries. I do like baked goods with the crumb topping. In fact I just bought a loaf of blueberry struesel bread. Couldn’t resist it. I have saved this for later.
