This last weekend I tried the Barefoot Contessa coconut cupcakes. It turned out like the Barefoot Contessa Coconut cake I made a couple of months ago, kinda dry. Now I’m certain I did not overbake it. While the cupcakes looked yummy and loved the cream cheese frosting (how can you not fall in love with cream cheese, butter and confectioners sugar?), the cake part itself was bland.
Martha Stewart re-aired her cupcake week this week and she shared her favorite cupcake, which is coconut. I’m gonna try it. It looks beautiful and it’s gotta be moist being that she uses coconut milk. I’ll post the results when I’ve tried it.
