Honey is one of nature’s sweetest treats. Those cute little busy bees create the most amazing concoction by regurgitating nectar from flowers. What would we do without our bees that pollinate and provide us with this syrupy gift? Now imagine, if you will, honey whisked in combination with Dijon mustard, red-wine vinegar, olive oil and marinaded over some succulent slightly salty pork chops. Sweet and salty meat…served with potatoes or rice on the side and don’t forget the green salad!
This is a quick-to-do marinade that can also serve as a salad dressing. I used this versatile recipe to marinade four pork chops and had some left over to use another night drizzled over some greens. It was sweet, but I’d still consider it savory over the salad. Here I tossed some baby spinach with grape tomatoes, pine nuts, the honey-mustard vinaigrette and some tellicherry pepper to taste. You can’t buy anything that fresh and delicious…it tastes best because you made it! Maybe add some crumbly feta over the salad to finish it off for truly good eats.
- For a slightly different take on this marinade/dressing, add some red pepper flakes to it to kick it up a notch or two! Maybe grind some up so it’s not in whole flake form.
- A couple of minced or pressed garlic cloves would also take it to another level.
Makes about 3/4 cup
2 tablespoons Dijon mustard
1/4 cup honey
1/4 cup red-wine vinegar
1/4 cup extra-virgin olive oil
Ground Pepper to taste
In a small bowl, whisk the ingredients together until well combined. Store in refrigerator for up to 3 weeks.
For Dressing: Refrigerate until chilled for salad dressing.
For Marinade: Pour marinade on 4-6 pork chops. Refrigerate for up to 3 hours before grilling, baking or panfrying.
