I took a bit of an extended holiday from TC. Mixed with some holiday traveling to the East Coast (New York!), celebrating our Silver Wedding Anniversary (25 years with my high school sweetheart!), ringing in the 2015 New Year in Las Vegas, and catching the seasonal flu – I’d say it’s been quite busy these last weeks. So what does this bright orange and interesting textured satsuma mandarin have to do with the new year? It’s citrus season and some of the best the season has to offer can still be enjoyed as snacking, included in your salads or used in parts for their juices, zest and skin for various culinary sensations.
