This is the type of healthful dish that’s really good any time of the day. Whether it’s for breakfast/brunch, snack, dessert, or lunch – it is filling and satisfying!
We’re layering healthy goodness in this parfait with low fat vanilla yogurt, spiced pumpkin butter and pumpkin pecan granola. It’s a welcoming parfait for the season but can really be enjoyed any time of the year.
This post is for pumpkin butter use inspiration. If you like pumpkin, like pumpkin butter, and enjoy eating yogurt, you’re in for a treat if you haven’t combined these ingredients together in your yogurt fare before.
No real recipe…just a mere suggestion. For these parfaits I’ve used low fat vanilla yogurt (I would’ve used non fat vanilla if I could find it!), followed with spiced pumpkin butter, another layer of yogurt and then topped with a layer of the pumpkin pecan granola from yesterday’s post. Unless you’re going to eat it right away, add the granola on top last so it doesn’t get soggy.
The vanilla with the pumpkin is a complimentary pairing. However, you can easily substitute yogurts by using plain yogurt or Greek yogurt. Use your favorite granola if you don’t make the one mentioned – that goes without saying for the spiced pumpkin butter too.
With regards to quantity and presentation, I used 6-ounce glasses for not only presentation, but for portion control. A little goes a long way and this serving size was perfect to keep you feeling satisfied for hours.
It’s just as easy to just dollop and put it together in a bowl! 😉

Layer the yogurt and pumpkin butter and top off with granola. Make ahead and add granola last to avoid sogginess. Keep refrigerated.

I could eat these little yogurt treats any time! Brilliant using the pumpkin puree that way. Need to find som time to make the pumpkin butter but will try to make the homemade granola this week. Pretty yogurts.

Hi and thank you, Samantha. You can use a store bought pumpkin butter -OR- a pumpkin pumpkin puree, though it won’t be spiced. If you have a couple of hours, the slow cooked spiced pumpkin butter will not disappoint! 😉
