I didn’t know what to call this egg dish because it’s something I’ve been whipping up for years without a name. I usually make plenty so that there’s leftovers and it’s great warmed up.
Serving suggestions:
- Sprinkle some grated colby jack cheese on it…or even better, use cotija cheese.
- Serve with fresh homemade salsa for a kick.
- Great warmed up as leftovers and makes quick breakfast tacos in the morning as you’re headed out the door.
- Add a green, red or yellow pepper for additional great flavor and added visual appeal.
- Because of the meat used in this dish, I don’t use salt.
I’ve made this for many breakfast guests, and it’s always been a hit. When I serve it, people don’t ask, and I don’t tell them the special ingredient that is really a big star in this egg dish. Without peeking at the ingredients listed below…look at the picture above. Can you name all the ingredients?
Serves 4
2 tablespoons extra-virgin olive oil
2 russet potatoes, cubed
8 ounces low sodium SPAM (or ham), cubed
1/4 of brown onion, cubed
3 roma tomatoes, cubed
1 green bell pepper, cubed (optional – can use also yellow or red bell pepper)
5 eggs, beaten in prep for scrambled eggs
Pepper to taste
In a large skillet, add 1 tablespoon of the extra-virgin olive oil and add potatoes. Cook potatoes on medium-high until tender and caramelized turning occasionally to evenly brown (careful not to handle too much or potatoes will not be able to brown and will turn mushy). When potatoes are done, transfer to a plate and set aside.
In another pan, cook SPAM/or meat until evenly brown and caramelized. The browning will give it great texture and flavor with the rest of the ingredients. When the meat is cooked, transfer to a plate that is lined with paper towels to drain the oils from the meat. Blot the meat with additional paper towels to absorb the extra oils.
Using the pan you just cooked the meat in, give it a quick wipe with paper towels to absorb remaining oil in the pan. Add 1 tablespoon of the extra-virgin olive oil and saute the onion and tomatoes (and bell pepper if using) until tender. Add eggs and scramble to preferred consistency (I like mine well done). When the eggs are cooked to your preference, add the potatoes and spam and gently toss together with the scrambled eggs to evenly distribute the potatoes and meat. Sprinkle pepper to taste.
Serve warm.

Made a batch this morning, it turned out AWESOME! Heated up some tortillas and made tacos, added some hot sauce and WOW. The spam gave it a great salty taste. This will become a weekend favorite.
