
Sweet Potato, Pecan and Cinnamon Bread
One, 2-pound loaf
Ingredients
- ¾ cup water, room temperature
- ⅔ cup mashed sweet potato (see note for prep)
- ⅔ cup chopped apple, with peel, cored
- ¼ cup nonfat dry milk
- 1½ teaspoon salt
- 3 tablespoons granulated sugar
- 3 tablespoons canola oil
- 3¾ cups bread flour
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1¼ teaspoons instant yeast
- ½ cup chopped pecans
- 1/3 cup raisins
Method
- Wash, scrub, and dry a sweet potato. With a fork, prick holes around the potato at least 4-5 times. Loosely wrap in a paper towel and microwave on high for 4-7 minutes, rotating half-way (your time may vary). Cook until the sweet potato is tender.
- When the sweet potato is cool enough to handle, cut in half and scoop out the potato, mashing with a fork. Measure out 2/3 cup and set aside to completely cool.
- Measure out all the ingredients EXCEPT the pecans and raisins into the bread machine’s baking pan in the order that the manufacturer recommends.
- Fit baking pan in the machine’s chamber and select SWEET CYCLE.
- Add the pecans and raisins when the machine indicates (or before the first rise).

Teenie Notes
- Make sure your bread machine can make a 2-pound bread loaf.
- Don’t use mashed sweet potatoes that has other ingredients cooked into it.
